Four Season Wine Trail at Ardor: Lessons in Food and Wine Pairing

And who would find any fault with John Keats ardor for divine nectar - surprisingly Ardor also happens to be the place in Connaught Place where I was invited for Four Seasons Wine Trail. I would like to produce yet another quote by none other than our wine sommelier:

No. I didn't knew that before attending this event. Before going ahead with the finer details of the events which are to be frank vague recollections at best I’d like to extend my thanks to Akshay Gopal of Team Ginger Claps and Jyoti, , our wine sommelier. I’d also like to extend my sincerest apology for the delay in coming up with this post on Four Season Wine Trail Event held at Ardor.

Without dwelling much over the spilled beans let me come back to the event i.e. Four Seasons Wine Trails at Ardor, Connaught Place in January. First, I’d like to give a brief overview of the fast changing food and wine scenario of a rapidly developing urban India.

Wine is fast catching up the imagination of urban youth and becoming an important part of gourmet dining. What wine does, if paired properly with food is make a symphony out of a meal going together with the food and adding a sparkle to the dining experience.

My first tryst with wine was during my college trip to Baramati (- co-incidentally Four Season wines are matured in the same region in Sahyadri valley). On our trip to wineries we had all purchased Zinzi Rose, White Red and all at throw away prices and even 4 bottles that I had couldn’t last two days. At that time – novice as I was and with no sommelier like Jyoti around to tell me about the finer nuances, I found Red and Rose quite appetizing and White to be okay.

The 4S of Wine Tasting

SEE –Before opening the bottle, notice that wine level in the bottle should be such that it touches the tip of cork to keep it wet so that the stopper doesn’t allow any air to creep in which could compromise the quality. After pouring wine in the glass, first look could tell you about the aging and process. If old and aged, white one is generally darker and red wine is generally lighter. A good quality wine should also be clear when you have a look at the glass and not opaque. Quality of grapes and duration of aging could lead to a range of color variations.

SWIRL – Gently swirl your glass of wine holding it at base and try to aim to coat the sides of the glass. The swirling brings out the latent power of wine, a sudden eruption like some sleeping volcano coming to life after long slumber. What actually happens is that the swirling sends oxygen through the wine which expands the surface area thus allowing the aromas to open up.

SMELL – After the swirling take a sniff of the aromas released by the wine. You will be surprised by the amount of aromas that fill up your nose. Fruity, peppery, herbs! White wine exudes citrus aroma whereas red wine is more berry like and warmer location such as Baramati adding darker riper scent.

SIP – Take a sip of the wine and roll it around in your mouth. The taste of the sip of wine is combination of the actual flavor as well as the scent.

About Four Seasons Wine Trail event at Ardor in Connaught Place

Four Seasons by UB Group is aimed towards the sophisticated Indians, the Movers and Shakers, the urbane young brigade who are redefining the outlook and lifestyle of rapidly developing India. They are educated, they have traveled, they love to experiment and they are sophisticated. These are the taste and traits to which Four Seasons will appeal. The wine trail that I was invited to, was an eclectic mélange of this heady mix of youth and urbane. These wine trails which are conducted all over the country aims to educate the populace about finer nuances of wine. After attending the trail, I could surmise that it won’t be long before Wine and Food pairing becomes part of the urban lifestyle wine and a staple at the dinner table of restaurants in cities.

I have been drinking wine for quite a few years now but before this I had never put into so much thoughts about wine and food pairing. Thanks to Jyoti, I could now call myself a wine literate (if not yet educated) person as opposed to the novice I was years back when I first tasted wine in Baramati. With so many experts on wines, and opinions being subjective more often than not, the discussion on the merits of bubblies could elicit endless discussions. Although a bit pedantic, her lessons were enlightening.

The journey of the Four Season Wine by United Breweries begins at a vineyards in Baramati in Sahyadari region in Maharashtra from where the grapes are produced, plucked and sent to a Four Season Winery located in Baramati to be prepared for primary ferment. The difference between red wine and white wine comes from the fact that in White, skin is removed from the grapes and plays no further part whereas in case of Red fermentation occurs with the skin. Yeast may be added to assist fermentation. It takes time before wine is fermented till it matures in wooden drums. Maturity could take anything from a few months to 15-20 years for top brands of wines. You could know the date of bottling but it's the taste, colors and aroma which gives you an idea about the age of a wine.

Wine and food matching is the process of pairing food dishes with wine to enhance the dining experience. In the opinion of wine connoisseurs and sommeliers around the world Food+Wine is all about fragrances, finesse and balance. For food and wine pairing, we were told that balance is the key word. It should be taken care of that the wine doesn’t overpower meal and vice versa.

When mixing food with wine, one should follow few basic rules of pairing. Sweet wines pair naturally with desserts whereas acidic wines go well with salty food, fish and salad. Another interesting thing about food and wine pairing is that wine of a particular region matches well with the local cuisines of that particular region.

Ah! You see quite an expert I have become. I think I am ready to give a lecture on finer nuances of food and wine myself. Thank you Four Seasons for the education.

In yet another incident in India's hall of shame, a South Korean woman was allegedly molested in a moving bus in Kolkata. The incident comes in the backdrop of growing concern over the safety of women including foreign tourists in India. One of the major factors is that rapid urbanization after the liberalization of Indian economic policies led to great divide in India populace leading to formation of many India’s. With urban development and empowered women coming out to work shoulder to shoulder with men and adopting modern lifestyle to express themselves as equals whereas a large section of society remained outside this rapid growth. With passing time, it is becoming progressively more difficult for a socio-economically and sexually repressed India to co-exist with the modern, progressive and independent India.

Tragic as these incidents which are taking place all over the countries and in cities and towns, the incidents when compared statistically and given the fact that India is a country of over a billion people are rare at best. So how safe is India for women and especially foreign women solo traveler? According to the latest tourism data available with the government around 6.3 million tourists visited India from overseas in 2011 not to mention the fact that a large chunk of these 6 million foreign visitors are women and more than half of them traveled alone. So it does appear that despite the media hype over such sensitive issues and global outcries (mostly media created), India is relatively safe for foreign women travelers and that these incidents are rare at best.

After the December incident of horrific Delhi rape of a physiotherapy student, the media is hyper-actively pursuing the cases of rape and sadly many channels are sensationalizing these sensitive issues instead of talking about how to find solution.  77% voted no to the poll question "Are women safe traveling alone?" in a recent poll on Wall Street Journal Blog.

While caution is the word, those rethinking their travel plans to India should not be alarmed or just cancel their travel plans. In a recent travel briefing after the rape of Swiss tourist in Madhya Pradesh, Control Risks, a global risk consultancy firm said that “although the incident is serious, violent crime against foreigners remains relatively rare in India.” Advising caution to tourists against traveling alone it added that “India remains generally safe for female travelers and most women will experience, at worst, unwelcome attention from men.

But the question is how you ensure your safety traveling alone in India if you are a woman? Find below some travel tips not just for safety of women traveling alone in India but for any country in the world. The keyword is that as a tourist traveling in a foreign country should always be alert and responsible. They should follow some do's and don'ts. Now the funny thing is even as I am writing this I personally know foreign travelers whom I have met and who have not adhered to these rules but then who knows what might happen as ‘Times they are a Changin’. At best this rules are a general guideline. It not necessarily guarantees that you will be safer neither that if you will do the opposite you'll be the victim.
  1. Traveling safety precautions for a woman often depends on the places and region they are traveling to. One could always travel alone but it’s better safe than sorry. In certain regions like Kashmir especially Ladakh, South India, Uttarakhand and North East assaults against women travelers are unheard of. North India especially Delhi and adjoining areas is where women is most vulnerable. It’s always wiser to have a male companion around which makes it less likely to be sexually harassed and/or molested.
  2. Never travel alone at night especially in Delhi in an auto-rickshaw (tuktuks) or taxi. Before boarding a tuk tuk or cab ensure that there is no other person sitting except for the driver. Do take the number before hopping in and sit near the door. Keep cell phone with you in case you detect anything fishy. Don’t hitch a ride or follow a person who instead of giving you the direction you have asked about tells you to follow him instead.
  3. For long distance traveling book AC Tickets (1st, 2nd or even 3rd is safe) in Indian Railway if you are in India and have a Indian cell phone number you can do so online through IRCTC or Cleartrip. Use a porter at the train stations. Carrying a cell phone is a great asset and talking to someone you know when you’re on the move is even better. And always mind your space and let people know it’s not okay if they trespass your personal space and be firm.
  4. If you are a female solo traveler safety standard should take precedence over budget while choosing your accommodation. The rule is that the lower the cost of a hotel the bigger the risk with safety.  Also don’t take accommodation is obscure places. Look for recommendations at online travel community like TripAdvisor, Lonely Planet of IndiaMike.  
  5. Don’t ever accept the food offered to you by the person you don’t know especially on trains, buses, hotels and tourist places.  There have been a few cases where drugged food and drink have been offered to the tourists before robbing and sexually assaulting them. 
  6. Clothing is also very important when you are a women traveling to developing countries like India. Following the intrinsic yet unwritten cultural codes could save you a lot of hassle and glares make sure that your arms and legs are covered fully covered especially when you are traveling religious places and market areas or neighborhoods which are not upscale.  If you are traveling through rural areas people will stare at you but its okay as they are just curious and mean no harm. Although clothes has nothing to do with rape but some of the member of so called intelligentsia and cultural/moral brigade have also blamed ‘skimpy’ clothing for inciting men into assaulting men. Now add that too to India’s Hall of Shame. 
  7. Don’t make direct eye contact and smile simultaneously as this is often misconstrued by perverts and sexually repressed people as a sign of approval and freedom to take a step further.  Not that you can’t be friendly, it’s just that you need to be very careful with your body language. Appear assertive and stride confidently and ensure that your body language exude firmness. As mentioned above setting your boundaries is a must. Don’t get friendly and smile back to the people you don’t know. Don’t shake hands or hug people you know very little (your travel guide, cabbie etc.). If you are uncomfortable you let the person know instead of acting friendly in trying to not appear snobbish or insensitive. Don’t let anyone touch your hand or sit close as to brush you. Tell them politely but loudly to move away.
  8. Get to know the many India you’ll be traveling to. This rule is applicable in any country to which they’d be traveling. India is vast and a potpourri of cultures and beliefs. Each region in India varies considerably from the other. Although rapes have been reported from all around some places are much safer for a woman solo traveler. Regions like Ladakh, Darjeeling, North East, Uttarakhand Andaman and Nicobar, Kerala and South India in general are much safer than metro cities such as Delhi, Mumbai, Bangalore or Kolkata. 
  9. Get to know the Indian woman. Walk in her shoes, observe her to get a feel of how they travel and try to imitate their style. Not that it will make it safe to travel alone but it’s always good to have more tools to work around with. Prefer public transports for inter-city travel and always keep change. Don’t tip generously or where it is not needed. 
  10. Don’t encourage a person with politeness if he/she is trying to act extra friendly and most importantly keep your eyes and ears open and be alert of your surroundings. A little caution, alertness and following these dos and donts could go a long way in helping you plan a safe travel experience in India especially if you are a solo woman traveler.

Established as a retreat from the scorching heat of summer by British in then Madras,  Ooty is still pervaded by distinct colonial charm. The ride to this tiny hamlet of Raj era countryside in India is on a toy train (The Nilgiris Mountain Railways) which recreates the romance of bygone century, the scenery is stunning and its best if you have managed to get seat on the left-hand side. After that, it’s a visual delight, with pretty cottages, bijou fenced flower gardens, lush surroundings, thatched-roof churches and terraced botanical gardens.

The charming little hill station Ooty is best for languid stupor.  Although the urbanization and popularity of this place has taken its toll, you just need to venture a few kilometres out to find yourself amidst the peace of hills, an almost Shakespearean pastoral refuge.


Activities here include visiting various sunset points, botanical gardens, tea plantations, lakes and various waterfalls. Doddabetta Peak, Tiger Hill and Ooty Lake are most popular attractions here.


Best season: Ooty is a welcome relief from October till June which makes it one of the most evergreen hill stations in India which could be visited throughout the year.

The Chinese man is pursuing his Ph.D and could  begin this tour only after completing his doctorate, which is not before next  year. The Industralist from Italy is all set to book this and become the first lucky person and the prospective buyer of this tour package that is nailed to be the costliest one in history. The process of finalizing his itinerary is still being carried out.


The founder of the company that launched this offer, VeryFirstTo.com, Mr. Knobil said that more such positive responses have been collected from many more interested well-to-do travelers, ready to spend this fortune. Seeing the amount people spend on a one or two week trip, the duration and places this would cover, the figure does not seem that exaggerated. The recently concluded Arabian Travel Market, 2013 hinted some promising prospects for Indian Tourism. India has emerged a global favorite with globetrotters, as per recent travel statistics. India’s image as a geographically, culturally and demographically diverse country has helped it gain incomparable mileage among international travelers.

Vikas Rustagi, Regional Director at a major Tours and Travel company based in Dubai, commented “In 2011, total foreign tourist arrivals (FTA) in India stood at 6.29 million as compared to 5.58 million FTAs in 2010. India Tourism has set a target of increasing the share of India in world tourist arrivals from the current 0.5 per cent to 1 per cent by the year 2017 and has prepared a multi-pronged strategy to increase India’s global share of tourist arrivals. This includes development of world class infrastructure and undertaking aggressive promotional and marketing activities,”

Another interesting trend observed was the growing liking for India as a tourist destination between travelers from the Middle East.

“There has been a consistent and positive growth of foreign tourist arrivals from the Gulf and the Middle Eastern region to India over the last two to three years, with the year 2011 registering an overall growth of around 14 per cent over the previous year. Some of the countries, particularly the UAE, Saudi Arabia, Oman, Yemen and Turkey are emerging as major tourism generating markets in India from this region,” Rustagi added.

Concerns about travelers’ safety in India were quickly dispelled with statistics proving that visitors to India enjoyed safe holidays and a major percentage were actually repeat visitors.

“It is a safe destination and the recent instances are only aberrations. Forty percent of 6.65 million foreign visitors to India last year were women who did not report any major problems during their visit. While the country continues to receive repeat visitors, it remains a safe destination for international visitors including women tourists. However, foreign visitors need to exercise caution, just as local residents do, while travelling through or staying at isolated places, to guard against becoming victims of undesirable elements.”

Due to the disparity between its climate and other geographical features, India is fit for year round travel, experts believe. Since there is no possible land form that India isn’t blessed with, there are plenty of tourist destinations in India that tourists can head to at different times of the year. In the summer months of May-July, Ladakh in Kashmir and Himachal Pradesh are popular tourist jaunts, while during winters in the December-Feburary period beach destinations like Goa and Cochin receive a massive footfall. The period between October and April is especially important for luxury travel since this is when all Indian luxury trains are in operation. The answer to this question is that yes, traveling forward in time (to see the future) is indeed possible. So why isn't it done? 

To travel forward in time requires that you are moving at a speed which is equal to or greater than the speed of light. The reason you could not travel forward in time our scientists are yet to find a way to attain that kind of momentum.

Traveling forward in time at a faster rate than you are used to is a simple matter of traveling at, or near, the speed of light.  As you approach the speed of light, time will slow down for you, meaning it will speed up for the rest of us.

If you leave the earth at a speed that is close to the speed of light, keep traveling for some time and travel back and reached earth. During your travel assume that you just spent 5 birthdays in your spaceship, then you would find upon returning that everyone other than you had aged 50 years during what was just 5 years for you.

Going backwards is much more theoretical than going forward, but it's easy to imagine if you can wrap your brain around the idea that time is just another dimension. 

Although Einstein’s theory allows for travel back into time, scientists all agree that in theory, it should only be possible to travel back to the point when the first time machine was created.
